Because they are authentic Old Italian recipes. These Italian recipes haven't come from cook books but from the old ladies of the Sardinia Villages that have always made them with great passion and through my 20 years of experience working in my own bakery.
My ultimate goal is that you fill your home with beautiful sweet fragrance of the tastiest Italian cookies that will delight you, your family and friends.

Having Italian cookie recipes is a great head start for any passionate baker but I don't believe that that is everything.
I can say from my own experience when I started up my own bakery in 1992 I had all the recipes I needed but it was only after trying them out over and over again that I really understood the do's and don'ts.
I am not trying to put anyone off here... on the contrary my aim is to help people who have a passion about baking and really do wish to make authentic Italian cakes and cookies.
I will try and do my best to give you all the instructions using;
Recipes of the old traditional cookies made in Sardinia were given to me by the old people of my town. It was the starting point; the only thing was all the recipes given to me were vague. All the recipes used by the older generations were made 'a occhio' literally this means 'by eye'. Basically it means use your own good judgment.
That's OK for someone who has used the same recipe a hundred times, but for someone tackling it for the first time it's no help at all.
I have to admit that I do not like guess work when it comes to recipes. I believe that if I am going to spend money, time and effort in a creation then I would like to know that I have a solid base to work with.
When I first started baking for a living there were many trial and errors but over the years I have worked out the perfect balance in the old Italian cookie recipes given to me. I have not changed any of the recipes all I have done it worked out the precise quantities.
Although you can still find Patisserie's that make excellent traditional Italian cookies for those of us who had the chance to taste the same cookies made by our grandmas remember a genuine flavor that was somewhat different.
The secret not only lies in the recipe but in the quality of the ingredients used to make them.
